Oysters are a live animal and need to be treated accordingly. Proper storage is not difficult. Oysters should be stored in a cool, damp place (ideal temperature is 4°C). Use the seaweed provided as a moisture indicator. The seaweed should remain damp. If the seaweed dries out, sprinkle some water over it and the oysters. A damp cloth or paper towel can also be used in place of the seaweed.

If an oyster gapes and does not shut when its valves are squeezed together, it should be discarded. Do not allow oysters to freeze or become submerged in water. Oysters are freshest when consumed shortly after purchase. However, under proper storage conditions, ShanDaphs will keep without any noticeable deterioration for two to three weeks.
